Tetrasodium Pyrophosphate(TSPP)

       TSPP can be complexed with metal ions. Its 1% aqueous solution has a pH of 10.0-10.2. It has the commonness of ordinary polyphosphates, that is, it has emulsification, dispersion, preventing fat oxidation, improving protein binding, and also has the effect of inhibiting food oxidation and fermentation at high pH value.

Applications

(1) Canned pork sausage, mixed meat with compound phosphate (sodium pyrophosphate 60%, sodium tripolyphosphate 40%).

 

 

(2) TSPP is used in soy sauce and soy sauce, the amount of which is about 0.005% to 0.3%, which can prevent soy sauce from Browning and improve the color.

 

(3) It can be used as a melting agent and emulsifier of cheese, which can release calcium ions from calcium caseinate in cheese, increase the viscosity of casein, and obtain soft and extendable products. Generally, sodium pyrophosphate, orthophosphate and metaphosphate are used in combination, and the amount does not exceed 0.9%(calculated in P).
