D-Mannitol

        Mannitol is also known as D-mannitol. This remarkable compound boasts a delightful sweetness, ranging from 0.55 to 0.65 times that of sucrose. Uniquely among functional sugar alcohols, mannitol is a hexabasic sugar alcohol that resists moisture absorption. It offers an ideal level of sweetness, is low in calories, and is free from toxic side effects. Importantly, within human physiological metabolism, mannitol neither affects nor elevates blood sugar levels and crucially, it does not promote dental caries. As such, it is an excellent choice for sweetening foods suitable for diabetic and obese patients.

Applications

(1)Crafting foods for diabetic individuals. The primary metabolic pathways of mannitol do not impact blood glucose levels significantly upon consumption, making it a safe and suitable option for those managing diabetes.

 

(2)Creating anti-caries sweets. Mannitol is not metabolized by oral bacteria and even inhibits the proliferation of Streptococcus mutans. Therefore, it is a trusted ingredient in the production of anti-caries confections. Notably, the U.S. FDA permits the labeling of sugar-free products containing polyols like mannitol with the claim 'No dental caries.'

 

(3)Formulating mannitol chewing gum. With a refreshing sweetness equivalent to 0.6 of sucrose and a dissolution endothermic of -29Cal/g, which is about 76% of xylitol's -38Cal/g, mannitol serves as an effective sweetener and flavor enhancer in chewing gum production.

 

(4)Employing as a moisture barrier. Unlike sorbitol and xylitol, mannitol resists moisture absorption with a solubility of just 18 g/100 g at 20°C, considerably lower than that of sorbitol, xylitol, and maltitol. It serves as an effective moisture barrier to prevent stickiness during the manufacture and use of gum, chewing gum, and related products.

 

(5) Mannitol's non-participation in the Maillard reaction ensures materials do not readily caramelize during food processing, maintaining the product's appealing color and making it a favored ingredient in baking applications.
