Locust bean gum

         Locust bean gum (LBG, carob gum, carob bean gum, carobin, E410) is a galactomannan vegetable gum extracted from the seeds of the carob tree (Ceratonia siliqua) and used as a thickening agent (gelling agent) in food technology.

Applications

(1) The combination of locust bean gum and carrageenan resulted in elastic jellies, while carrageenan alone resulted in brittle jellies.

 

 

(2) Locust bean gum seaweed gum and potassium chloride are widely used as composite gelling agents in pet cans.

 

(3) The compound of locust bean gum/carrageenan/CMC is a good ice cream stabilizer, and the dosage is 0.1-0.2%. Locust bean gum is also used in dairy products and frozen dairy desserts as a water-holding agent, improving taste and preventing ice crystal formation;

 

(4) It is used in meat products, western sausages, etc. to improve water-holding performance,
as well as to improve the tissue structure and freezing/melting stability of meat; For puffed food, it imparts lubrication during extrusion, and increases yield and shelf life;

 

(5) For cheese production, it can accelerate the flocculation of cheese, increase the yield and improve the coating effect (the dosage is 0.2-0.6%);
